^^^^^^ what he said, except i hate both of those peoples guts....david blaine just wont fucking drown, and chris angel has too many people convinced he's jesus....they both use REALLY old and REALLY overused tricks which they didnt invent themselves, the only thing that's new, in any way, is the presentation--with david blaine, it's "mind over matter", chris angel, it's he looks drunk off his ass 24/7...
you want to learn sleight of hand type stuff, you want to be able to make it appear as tho you're doing one thing and do a completely different thing, and you want to learn to have a very VERY gentle touch....AND MOOOOST importantly, you want to have the ability to shift your 'victim's' attention away from what your hands are doing....

first part: yes, practice is fucking good, it is a honed skill with most people
second part:
when you make eyecontact with a person who believes themselves superior to you--which, undoubtedly, anyone worth pickpocketing will--they WILL NOT look away till you do...even if their eyes look away, they wont linger on your actions, the person will be completely focused on your face, your hands free to do whatever you like....when done properly (which, this particular thing isnt exactly easy to do, you have to be a damn good judge of character, and you have to carry yourself a certain way), you can get away with carrying a gun in a london subway (in plain sight), right past a cop.....the person wont notice your hands, leaving them free to do whatever you like...
the most important part of doing THAT, tho, is to make sure your eyes never leave their focus--you keep your victim entranced...you look away, and they will, and they'll be a thousand times more likely to notice anything you do from that point on....
now, just for picking pockets in a crowded place, you want to shift focus completely away from you, you dont want the person even realizing they passed you...so dress in a way that fits the area you're in (no, i dont mean urban camouflage, tho it would be fun to suddenly blend into teh wall when teh person noticed you), try to have an 'accomplice' for bigger things, someone who can make noise, so to speak, to keep the victim from being fully aware of himself
and be picky, after all, you can be, pick victims who you know arent completely alert (you'll be able to tell), and who you know wont notice for a while --stealing someone's wallet as they go to get in line to buy coffee is STUPID, he'll notice within minutes, and if you're not gone fast enough, he may remember you passing rather closely, and shout at you....however, if you have any real skill, he wont notice for quite a while....tho, stealing afterward allows you the chance to get an idea of what he's got IN his wallet.... =P
