Saltpeter is a very useful substance. Just off the top of my head you can use it to:

make black powder (instructions in the anarchist cookbook)
make nitric acid (also in the anarchist cookbook)
make smoke bombs (half and half by weight with sugar, (either melt it together slowly in a pan, or powder it very finely and mix well), burn, produces heaps of thick white smoke that doesn't have much odor, you can mix in other chemicals to give it color)

and my personal favorite

make solid rocket fuel (mix 65/35 by weight with sugar, heat it up in a pan till it melts (stir it alot, if carmelizes normally, but if it starts to turn black you are about to ignite it), fill a pipe or tube with it (pvc works well for small motors), make a core through the middle (a pointed hot metal rod works best, or drill it after it hardens) to increase burning area. Cap one end and make a nozzle on the other, which can be as simple as a washer well affixed to the end with epoxy, or a machined converging/diverging nozzle specifically designed for your motor. The only problem with this type of motor it's harder to ignite than your average estes motor, but it can be done with an electric match, or a solar igniter with some extra black powder around the tip.

Be careful when messing with these, if you make the motor too big for the materials you risk an overpressure and explosion (rocket motor becomes a pipe bomb). The biggest factor is the nozzle. The narrower you make it the higher the thrust will be, but it will also increase the internal pressure.
