Stealing headphones is perhaps the easiest thing ever and me being a music junkie without cash, I know plenty about. The only thing is you must go to a store that has the brand of headphones you go in with (even if they're broken). First you go inside with your headphones in your ears. Browse and shop a little bit look at the prices whatever. Then you grab your headphones and head to the bathroom. If anywhere this is where you'll be stopped but that isnt the problem. I have tested this before and have been caught and all that happens is they tell you to leave the products outside the restroom.
If you make it into the bathroom discreetly open up the case in one of the stalls and pull off the switch putting the broken headphones in the discreetly opened box. Put the old headphones down as soon as you get out of the bathroom in a way that conceals the broken package and then calmly but quickly walk out of there with the new headphones in your ears. If you've done this right there is no way for them to prosecute you for anything and the worst case scenario is if they just tell you not to bring the headphones in the bathroom and you have to make a discreet exit.
